From the Kitchen of Mom: Blueberry Buckle

It’s 6:02am and I’ve been up for three hours.  Cubs woke up to go out at 3 and I never could fall back asleep.  I’ve been craving blueberry buckle for literally months.  Probably because of this…

 I was up, so I figured “what the heck” and went for it.

Blueberry Buckle

Batter:

3/4 C Sugar

1/4 C Shortening or Butter

1 Egg

1/2 C Milk

2 Cups Flour

2 tsp Baking Powder

1/2 tsp Salt

1tsp lemon zest (I added this)

2 C Blueberries

Topping:

1/2 C Sugar

1/3 C Flour

1/4 C Butter

1/2 tsp Cinnamon

1.  Preheat oven to 375

2.  Grease and flour a 9X13 inch pan

3.  Mix wet ingredients.

4.  Add dry ingredients and stir until thick batter forms.

5. Add lemon zest and blueberries.  Fold until combined.

6. Pour batter into greased and floured pan

7.  Mix topping ingredients and spread evenly over top of batter

 

 Bake at 375 for 40-50 minutes.
